Does anyone know what fork will swap over so I can run a double disc on the front? Or even if a different swing arm and rear wheel would fit the chassis to put a disc on the rear?

AFAIK, this has not been tried on the late model 750.  If I were on a misssion, I'd start by looking at the front end of a

CBR600 or a NV700.  You might also look at a mid-80's 700/750 Magna or Sabre.
