I am preparing to replace my chain and sprockets. I have a torque wrench, but my manual gives me two pounds per foot numbers for torque: 43-51 ft. lb
Should I try to split the difference and why such a large variation in the numbers.

Splitting the difference is fine. They just give a range that is acceptable due to tool variation and such. Plus its a little bit of CYA on Honda's part.

As long as the torque is between those numbers it'll be ok as long as the threads are not previously damaged. I run it up to the lowest number or slightly over. That keeps it tight enough to stay put and minimizes the risk of stripping the threads.
